Zhalbaus Roble experiences aromas of great complexity, fruit, smoked and spicy with a balance between wood and fruit brilliantly achieved. Its roasted notes and a mineral background, gives it great originality in this olfactory phase, of great intensity and elegance.

For the elaboration of our Ribera Del Duero we decided to choose the environment of La Horra for its old vineyards, the deep soils in which the sands are mixed with calcium horizons and clayey bottoms and for the cooler climate of the north of the Burgos Ribera. The choice of wood for the barrel is not a trivial decision, and thus in the winemaking process "the structural properties of the wood are decisive", since it "must meet a series of physical-mechanical characteristics such as low porosity and adequate permeability, ring size and density, high mechanical strength, ease of creasing and high durability ",. During the time that the wine remains in the barrel, there is a slow and continuous penetration of oxygen into the wine "which will favor the appearance of different aromas.
In addition, within the barrel, the wine undergoes changes such as a loss of hardness on the palate, and the transformation of the accused astringency and bitterness into pleasant sensations of softness, nobility, balance and roundness.
